Tiramisu

Ingredients:

Lady Fingers

Chocolate Vodka

Espresso (or really strong regular coffee)

Cocoa Powder

Vanilla Extract

Mascarpone cheese

Steps:

  1. Start by making your mascarpone cheese mixture. Place all your mascarpone cheese into a mixing bowl, add granulated sugar and vanilla extract to taste, and mix well.

*I found mascarpone that already had coffee added to it, but regular mascarpone will do fine, too.

*If you like your tiramisu extra sweet, add more sugar, if you like the bitter coffee taste, add less or none at all.

*You can also add heavy whipping cream to your mascarpone. This will make it much lighter and fluffier

  1. Next, make your coffee mixture by adding espresso (or just really strong regular coffee) with your chocolate vodka

*You can also add coffee flavored vodka/ liquor if you prefer.

  1. Once these are ready, start your first layer of tiramisu by dipping your ladyfingers into your coffee mix and placing into a serving dish.
  2. Once all your ladyfingers are spread out evenly, place a dollop of the mascarpone cheese mixture into the middle of your cake and spread evenly.
  3. Repeat for another layer of each.
  4. Sprinkle cocoa powder (or finely blended chocolate chips) over your top later to finish.
  5. Refrigerate for at least 6 hours before serving

*This helps let all the flavors meld and makes for a more consistent texture throughout.

Homemade Pesto

Ingredients:

Fresh Basil Leaves

Garlic Cloves

Parmesan Cheese

Pine Nuts

Pepper

Olive Oil

Steps:

  1. Wash and dry basil leaves and remove the big stems

*I used a 2.5 oz package of fresh basil

  1. Put basil leaves into food processor or blender
  2. Add 3-4 garlic cloves, about a handful of pine nuts, and a handful of freshly grated parmesan cheese

*Save some parmesan cheese and pine nuts to garnish with at the end

  1. Add pepper to taste
  2. Pulse the blender a little bit to break down some of the basil leaves
  3. Add olive oil by small increments while blending until you get your desired peso consistency
  4. Once pesto is completed, pour onto pasta and stir

*I like to add cherry tomatoes for some color, too, but this is optional

  1. Add leftover parmesan cheese and a few pine nuts to the top

*Pesto is also a great spread for sandwiches or a nice base for homemade pizzas!

  1. Serve and ENJOY! :)

Smoked Salmon Avocado Rolls

Ingredients:

Smoked Salmon

Avocado

Dill

Lemon

Cream Cheese

Steps:

  1. Mix half a package of cream cheese and one whole avocado together in a bowl.
  2. Once both are nice and creamy, add in chopped fresh dill and the juice from one whole lemon.

*Save some dill for garnish at the end

  1. Once all filling ingredients are mixed together, lay each slice of smoked salmon on counter and scoop a row of the filling into the middle
  2. Fold over the salmon and roll into a log shape
  3. Repeat this for the rest of your smoked salmon pieces
  4. Once all have been completed, garnish with fresh dill and slices of lemon.
  5. Serve and ENJOY :)

Valentine’s Day Donuts

Ingredients:

Pillsbury Grands Buttermilk Biscuit Dough

Flour

Oil

Granulated Sugar

Powdered Sugar

Pink Paste Food Coloring

Valentines Day Sprinkles

Vanilla Extract

Chocolate Chips

Butter

Steps:

Donuts-

  1. Open package of Pillsbury Biscuit Dough onto a floured cutting board.
  2. Cut out holes from the middle of the biscuits using a cookie cutter or the rim of a shot glass.

*Save the insides of the biscuits to make donut holes!

  1. Once all your donuts and donut holes are shaped to your liking and covered in flour, move to stove.
  2. Heat pan of oil on medium heat until bubbles form on the bottom of the pan.

*Can test the oil by flicking flour into your pan. If it sizzles immediately, your oil is ready.

  1. Once the oil is heated, place your first few donuts into the pan and let brown
  2. After 30-45 seconds, flip and repeat for other side.
  3. When donuts are done, remove from oil and let cool on drying rack covered in paper towels
  4. Repeat for remaining donuts and donut holes.
  5. Dip the donuts in your assorted glazes and sprinkle your Valentine’s Day sprinkles on top.
  6. Serve, and INDULGE :)

Chocolate Glaze-

-Micro-wave half a stick of butter and two big handfuls of chocolate chips for about 30 seconds and mix together

Colored Sugar-

-Place granulated sugar and a few drops of pink paste food coloring in Ziploc back and mix/shake until all sugar turns an  even shade of pink.

Sugar Glaze-

-Mix powdered sugar and water until you get a slightly thick icing consistency. Start with small amounts. Add in a splash of the vanilla extract for extra flavor.

Bacon Wrapped Dates with Goat Cheese

Ingredients:

Dates

Bacon

Steps:

1. Slice the dates length-wise and remove pits from inside

*Do not cut in half. Both sides should still be attached.

2. Put goat cheese in Ziplock bag and cut off tip to make stuffing dates less messy

3. Cut bacon slices in half or thirds (depending on how much bacon you’d like per date).

*Can also use turkey bacon for a healthier option.

4. Pipe the goat cheese in the dates and press closed.

5. Wrap bacon pieces around each date and put on a baking tray seem-side down.

6. Bake in oven at 400 degrees until bacon is golden brown (about 20 minutes).

7. Remove from oven, let cool, serve with toothpicks, and ENJOY! :)

New Years Eve Midnight Martini

Ingredients:

Black Coffee

Coffee Liquor

Caramel Sauce

Milk

Ice Cubes

Steps:

  1. Make a pot of good quality black coffee and let cool to room temperature
  2. Once cooled, add some into a drink mixer
  3. Add equal parts coffee and coffee liquor
  4. Add a splash of milk
  5. Add a dollop or two of the caramel sauce for some sweetness
  6. Fill the rest of the drink mixer with ice, cover, and shake
  7. Pour into martini glasses, serve, and dance the night away :)

Dijon Brussels Sprouts

Ingredients:

Fresh Brussels Sprouts

Olive Oil

Garlic Cloves

Chicken Broth

Dijon Mustard

Pepper

Salt

Steps:

  1. Wash and dry sprouts, cut off stems, slice big ones in half, and remove any brown or yellow leaves.
  2. Mince your garlic cloves
  3. Cover a pan with a generous layer of olive oil and turn on medium heat
  4. Put sprouts into the oil

*Try to make sure each one is touching the pan so they turn golden brown

  1. Cover and let brown for 3-4 minutes
  2. Flip and let other side brown for another 3-4 minutes
  3. Once both sides are brown, put in a few splashes of chicken broth, garlic cloves, and add Dijon mustard, salt, and pepper to taste.
  4. Turn heat to low, stir together, and let cook for another 5 minutes or so.
  5. Remove from heat, let cook, and ENJOY! :)

Oreo Balls

Ingredients:
1 package double stuff Oreos
1 8 oz. package of cream cheese
Powdered Sugar

Steps:
1. Put Oreos into blender or food processer to grind finely into crumbs
2. Pour Oreo crumbs in bowl and mix in the whole pack of cream cheese
*May need to use your hands to mix
3. Once ingredients are combined, roll into balls, place on a baking sheet, and put them in the fridge for about 15 minutes
4. Remove from fridge, sprinkle with powdered sugar, and ENJOY! :)

Homemade Hot Chocolate

 Ingredients:

Skim Milk (or any kind you prefer)

Semi-Sweet Chocolate Chips

100% Cacao bar

Granulated Sugar

Whipped Cream (optional)

Crushed Candy Canes (optional)

 Steps:

  1. Pour milk into mug you will be drinking out of

*This will help you determine exactly how much you need

  1. Pour this milk into your pot turned on medium-high heat
  2. When milk starts foaming around the edges, turn off heat

*Do not let milk boil or burn to the bottom

  1. Add handful of chocolate chips and half a handful of 100% cacao chunks
  2. Add about 5 small pinches of sugar
  3. Add a splash of vanilla extract
  4. Wisk together quickly to combine all ingredients evenly and make into frothy mixture
  5. Pour hot chocolate into your original mug
  6. Top with whipped cream and crushed candy canes (optional)
  7. INDULGE :)

Candied Pecans

Ingredients:

Pecans

Water

Granulated Sugar

Cinnamon

Steps:

  1. Put pecans in pot and turn stove to medium-high heat
  2. Add just enough water to cover the bottom halves of the pecans
  3. Add twice as much sugar as water

*Better to have too much sugar than too much water

*If in doubt, add more sugar. The leftover sugar will just crumble away  and can be sifted out later

  1. Add 4-5 pinches of cinnamon
  2. Stir continuously until sugar crystallizes and becomes crumbly

*Will take about 15 minutes

  1. Once this happens, remove from heat spread on baking tray, and let cool
  2. DIG IN or give away as gifts! :)
