Tiramisu

Ingredients:

Lady Fingers

Chocolate Vodka

Espresso (or really strong regular coffee)

Cocoa Powder

Vanilla Extract

Mascarpone cheese

Steps:

  1. Start by making your mascarpone cheese mixture. Place all your mascarpone cheese into a mixing bowl, add granulated sugar and vanilla extract to taste, and mix well.

*I found mascarpone that already had coffee added to it, but regular mascarpone will do fine, too.

*If you like your tiramisu extra sweet, add more sugar, if you like the bitter coffee taste, add less or none at all.

*You can also add heavy whipping cream to your mascarpone. This will make it much lighter and fluffier

  1. Next, make your coffee mixture by adding espresso (or just really strong regular coffee) with your chocolate vodka

*You can also add coffee flavored vodka/ liquor if you prefer.

  1. Once these are ready, start your first layer of tiramisu by dipping your ladyfingers into your coffee mix and placing into a serving dish.
  2. Once all your ladyfingers are spread out evenly, place a dollop of the mascarpone cheese mixture into the middle of your cake and spread evenly.
  3. Repeat for another layer of each.
  4. Sprinkle cocoa powder (or finely blended chocolate chips) over your top later to finish.
  5. Refrigerate for at least 6 hours before serving

*This helps let all the flavors meld and makes for a more consistent texture throughout.

Valentine’s Day Pan-Cake!

Ingredients:

Bisquick Pancake Mix

Water

Eggs

Strawberry Preservatives

Fresh Strawberries

Heavy Whipping Cream

Powdered Sugar

Confectioners Sugar

Vanilla Extract

Mint Leaves

Steps:

  1. Mix together pancake mix with water and eggs (or follow directions on box)

*Try to make them as thin as possible, like crepes

*Aim to yield about 5-6 pancakes

*Make sure you use a non-stick pan or grease your pan generously… it really makes this process a whole lot easier!

  1.  Once pancakes are completed, set aside while you prepare the other ingredients
  2. Wash your strawberries, remove the greens, and slice a few times length-wise.
  3. For whipped cream, put heavy whipping cream into a mixing bowl
  4. Add granulated sugar and vanilla extract to taste.

*If you’re making this for breakfast, I suggest less sugar. If you are making this for a dessert, feel free to add a few more handfuls!

  1. Use electric beater to stir the cream until light and fluffy

*Should only take about 3-5 minutes

  1. Now that all the ingredients are prepared, assemble the cake starting with one pancake, layer on strawberry preservatives, fresh strawberries, and whipped cream.
  2. Repeat these layers in this order for the remaining pancakes.
  3. Once last pancake is placed on top, garnish with a fresh strawberry, a dollop of whipped cream, some mint leaves, and powdered sugar.
  4.  Bring into bed and indulge with your loved one :)

Valentine’s Day Donuts

Ingredients:

Pillsbury Grands Buttermilk Biscuit Dough

Flour

Oil

Granulated Sugar

Powdered Sugar

Pink Paste Food Coloring

Valentines Day Sprinkles

Vanilla Extract

Chocolate Chips

Butter

Steps:

Donuts-

  1. Open package of Pillsbury Biscuit Dough onto a floured cutting board.
  2. Cut out holes from the middle of the biscuits using a cookie cutter or the rim of a shot glass.

*Save the insides of the biscuits to make donut holes!

  1. Once all your donuts and donut holes are shaped to your liking and covered in flour, move to stove.
  2. Heat pan of oil on medium heat until bubbles form on the bottom of the pan.

*Can test the oil by flicking flour into your pan. If it sizzles immediately, your oil is ready.

  1. Once the oil is heated, place your first few donuts into the pan and let brown
  2. After 30-45 seconds, flip and repeat for other side.
  3. When donuts are done, remove from oil and let cool on drying rack covered in paper towels
  4. Repeat for remaining donuts and donut holes.
  5. Dip the donuts in your assorted glazes and sprinkle your Valentine’s Day sprinkles on top.
  6. Serve, and INDULGE :)

Chocolate Glaze-

-Micro-wave half a stick of butter and two big handfuls of chocolate chips for about 30 seconds and mix together

Colored Sugar-

-Place granulated sugar and a few drops of pink paste food coloring in Ziploc back and mix/shake until all sugar turns an  even shade of pink.

Sugar Glaze-

-Mix powdered sugar and water until you get a slightly thick icing consistency. Start with small amounts. Add in a splash of the vanilla extract for extra flavor.

Key Lime Pie

Ingredients:

1 whole package of Graham Crackers (crushed)

1 stick of unsalted butter

Handful of sugar

Cinnamon

3 egg yolks

1 14-oz. can of sweetened condensed milk

Key West lime juice

Whipped cream (optional)

Sliced limes (optional)

Steps:

Crust-

  1. Mix crushed graham crackers, handful of sugar, and a few pinches of cinnamon with room temperature/ melted butter.
  2. Combine until soft and crumbly.
  3. Pour into pie pan and press into desired pie crust formation.

*Using the bottom of a glass or a fork might help you with the edges.

  1. Once compacted and shaped, bake in oven for 15 minutes at 375 degrees.

 

Filling-

  1. Remove egg yolks from egg whites. Put egg yolks in mixing bowl and save egg whites for another recipe.

*Can use these to make more of our quiche cakes!

  1. Add the can of sweetened condensed milk to the egg yolks
  2. Pour the lime juice into the empty can until half way full, then dump juice into the mixing bowl
  3. Whist together until light and frothy.
  4. Once crust has been removed from the oven and cooled, add Key Lime filling
  5. Bake in oven at 350 degrees for 15 minutes
  6. Let cool, then place in the refrigerator for about an hour to let all ingredients settle.
  7. Serve with whipped cream and sliced limes and ENJOY! :)

New Years Eve Midnight Martini

Ingredients:

Black Coffee

Coffee Liquor

Caramel Sauce

Milk

Ice Cubes

Steps:

  1. Make a pot of good quality black coffee and let cool to room temperature
  2. Once cooled, add some into a drink mixer
  3. Add equal parts coffee and coffee liquor
  4. Add a splash of milk
  5. Add a dollop or two of the caramel sauce for some sweetness
  6. Fill the rest of the drink mixer with ice, cover, and shake
  7. Pour into martini glasses, serve, and dance the night away :)

Oreo Balls

Ingredients:
1 package double stuff Oreos
1 8 oz. package of cream cheese
Powdered Sugar

Steps:
1. Put Oreos into blender or food processer to grind finely into crumbs
2. Pour Oreo crumbs in bowl and mix in the whole pack of cream cheese
*May need to use your hands to mix
3. Once ingredients are combined, roll into balls, place on a baking sheet, and put them in the fridge for about 15 minutes
4. Remove from fridge, sprinkle with powdered sugar, and ENJOY! :)

Homemade Hot Chocolate

 Ingredients:

Skim Milk (or any kind you prefer)

Semi-Sweet Chocolate Chips

100% Cacao bar

Granulated Sugar

Whipped Cream (optional)

Crushed Candy Canes (optional)

 Steps:

  1. Pour milk into mug you will be drinking out of

*This will help you determine exactly how much you need

  1. Pour this milk into your pot turned on medium-high heat
  2. When milk starts foaming around the edges, turn off heat

*Do not let milk boil or burn to the bottom

  1. Add handful of chocolate chips and half a handful of 100% cacao chunks
  2. Add about 5 small pinches of sugar
  3. Add a splash of vanilla extract
  4. Wisk together quickly to combine all ingredients evenly and make into frothy mixture
  5. Pour hot chocolate into your original mug
  6. Top with whipped cream and crushed candy canes (optional)
  7. INDULGE :)

Candied Pecans

Ingredients:

Pecans

Water

Granulated Sugar

Cinnamon

Steps:

  1. Put pecans in pot and turn stove to medium-high heat
  2. Add just enough water to cover the bottom halves of the pecans
  3. Add twice as much sugar as water

*Better to have too much sugar than too much water

*If in doubt, add more sugar. The leftover sugar will just crumble away  and can be sifted out later

  1. Add 4-5 pinches of cinnamon
  2. Stir continuously until sugar crystallizes and becomes crumbly

*Will take about 15 minutes

  1. Once this happens, remove from heat spread on baking tray, and let cool
  2. DIG IN or give away as gifts! :)

Sugar Plum Cookies

Ingredients:

Sugar cookie dough

Plum Jam

Walnuts

Powdered sugar

Flour

Steps:

  1. Open pack of sugar cookie dough and roll out onto floured cutting board

*Try to make it into square shape if possible

*Working with chilled dough is always easier than room temperature

*Should be about ¼ to ½  inch thick

  1. Spread plum jam onto dough all the way to the edges
  2. Sprinkle the crushed walnuts on top of the jam
  3. Roll up into log and let chill in the refrigerator for 2 hours
  4. After dough has hardened, slice ½ inch thick slices and place onto a greased baking sheet
  5. Bake in oven for 10-12 minutes on 350 degrees or until golden brown
  6. When cookies are still hot, sprinkle powdered sugar on top and let cool for 5 minutes
  7. ENJOY! :)

I remember watching our old VHS of The Nutcracker over and over and over again when I was a child. I was deathly afraid of Drosselmeyer, the mysterious magician-like figure who I thought was ever so creepy. I loved, however, the beautiful dancing and costumes of the ballerinas, princesses, and of course, the sugar plum fairies.

Besides The Nutcracker, my favorite thing around Christmas time was the abundance of candy, chocolate, and cookies we had lying around our house.  I have fond memories baking all kinds of delicious German cookies with my grandmother, Omi. Over the years I got VERY good at sneaking raw dough into my mouth when she wasn’t looking, but before I became a pro, she would often times catch me with chipmunk cheeks full of nothing but sugar, butter, and eggs. Omi would then scold me, begin laughing, then taking a nice big spoonful of raw dough for herself.

This year I decided to combine both of these Christmas memories into one simple and delicious treat. These sugar plum cookies not only remind me of some of my favorite childhood moments, but they satisfy my relentless craving for desserts and are perfect for serving at holiday parties.
