Reuben Sandwich

Ingredients:

Irish Corned Beef

Sauerkraut

Thousand Island Dressing

Rye Bread

Butter

Swiss Cheese

Steps:

  1. Turn skillet on medium heat
  2. Melt a few slices of butter into your pan
  3. Spread your sliced rye bread into the melted butter to allow for a golden brown color on the outside.
  4. Spread the thousand island dressing onto the other (inner) sides of your bread
  5. Layer on the corned beef, Swiss cheese, and sauerkraut
  6. Complete your sandwich by placing the remaining piece of bread on top, buttered side out.
  7. Flip a few times until both sides are golden brown and cheese has melted.
  8. Remove from stove, slice in down the middle and ENJOY! :)

Smoked Salmon Avocado Rolls

Ingredients:

Smoked Salmon

Avocado

Dill

Lemon

Steps:

  1. Mix half a package of cream cheese and one whole avocado together in a bowl.
  2. Once both are nice and creamy, add in chopped fresh dill and the juice from one whole lemon.

*Save some dill for garnish at the end

  1. Once all filling ingredients are mixed together, lay each slice of smoked salmon on counter and scoop a row of the filling into the middle
  2. Fold over the salmon and roll into a log shape
  3. Repeat this for the rest of your smoked salmon pieces
  4. Once all have been completed, garnish with fresh dill and slices of lemon.
  5. Serve and ENJOY :)

Maryland Crab Dip

Ingredients:

1 lb Maryland Crab Meat

Shredded Sharp Cheddar Cheese

Sour Cream

Cream Cheese

Mayonnaise

1 Lemon

Ground Mustard

Garlic Powder

Old Bay Seasoning

Steps:

  1. Mix together chunky ingredients first: crab meat and cheddar cheese

*Save some of the cheese to sprinkle on top before placing in oven

  1. Once you have these in a bowl, add the filler ingredients: sour cream, cream cheese, and mayonnaise

*Any ratio of these will be fine. If you want it to be healthier, you can omit the mayonnaise altogether

*Can also use 1/3 fat cream cheese

  1. Next, add the juice from one whole lemon
  2. Add ground mustard and garlic powder to taste
  3. Add in the key ingredient: Old Bay Seasoning. Be as generous as you want with this until desired flavor is reached, doing taste tests along the way.
  4. Once all ingredients are combined, place into oven-safe container, spread evenly, and add left over shredded cheese to the top
  5. Put in oven at 375 degrees for 20-30 minutes until cheese melts and dip is bubbling.
  6. Remove, let cool, and serve with chips or bread. ENJOY! :)

Santa Fe Stuffed Peppers

Ingredients:

Red Bell Peppers

Black Beans

Corn

Red Onion

Garlic

Jalepenos

Tomato

Cilantro

Salt

Ground Turkey

Chicken broth

Grated Monterey Jack Cheese

Scallions

Directions:

 

1. Wash, dry, and slice/ chop your red peppers, red onion, garlic cloves, scallions, jalepenos, tomatoes, and cilantro

2. Turn your stove onto medium high heat, add some olive oil, and mix together ground turkey, onions, and garlic

3. Once the meat has cooked, add corn, black beans, tomatoes, cilantro, jalepenos, salt, and a splash of chicken broth

*Save some of your cilantro for garnish at the end

4. Once the chili portion of this recipe has been simmering for 10 minutes, scoop into your red bell peppers.

5. Place your stuffed peppers into the oven at 350 degrees for 35-40 minutes, until red peppers get soft.

6. Sprinkle grated cheese on top for the last 5 minutes that your peppers are in the oven.

7. Once cheese has melted, remove peppers from oven, let cool, garnish with scallions and cilantro, and ENJOY! :)

*Can serve with sliced avocado and sour cream, too!

Homemade Hummus

Ingredients:

1 16-oz. can Chickpeas

1 Lemon

Sesame Tahini

Garlic Cloves

Salt

Olive Oil

Parsley

Paprika

Pita Bread or Chips

Steps:

  1. Drain can of chickpeas and set liquid aside for later use.
  2. Put chickpeas into blender or food processor

*Save a few whole ones for garnish at the end

  1. Add juice from one whole lemon, about 3 cloves of garlic, then add olive oil, salt, and tahini to taste.

*Make sure you shake/ stir the tahini before you pour it in. The oil separates from the paste and will be sitting on top

*Tahini is heavy in calories so you can decide how much you want to use.  It generally makes the hummus thicker and have a more robust flavor.

  1. Once ingredients are blended together, you can add in some of the liquid initially removed from the can of chickpeas

*If you like your hummus thick and chunkier, you can omit this step.

  1. Pour into serving dish
  2. Top with drizzle of olive oil, a few whole chickpeas, sprigs of parsley, and paprika.
  3. Serve with pita bread, pita chips, or veggies and ENJOY! :)

Tuna Pasta Salad

Ingredients:

Elbow Noodles

Canned Tuna

Olive Oil

Dijon Mustard

Mayonaise

Cherry Tomatoes

Celery

Red Onion

Salt

Pepper

Steps:

  1. Cook elbow noodles in a pot of boiling/salted water until al dente (slightly firm)
  2. Drain and let cool to room temperature
  3. Add chopped tomatoes, celery, and red onion to the bowl of noodles
  4. Add in your cans of tuna.

* I used two cans, but feel free to add more!

  1. Add mayo, Dijon mustard, salt, and pepper to taste

*For less calories, add more mustard than mayo

  1. Mix together, serve, and ENJOY!

*Makes for great leftovers :)
